Corantine cookies

Hey Lovelies!πŸ€—

I don't know about you but like everyone and their sister I've been doing a little (ok, a lot) of baking while I've had all this extra time at home and it's been so good for me. 😍 Food is truly my love language.


And while I know I already have a couple of cookie recipes up on here, they were a little on the smaller side. Plus it's been a while since I created something from scratch.

What I created was this huge cookie that is a blend of chewy and crunchy. It's delicious warm or cold. And it can be switched up to fit whatever you'd like to go in it.😁 So far I've stuffed them with peanut butter and chocolate chips. Who knows what I'll go with next. I'll probably start putting mini versions of it on cakes/cupcakes soon bc it's that good!🀀


The great thing is, you can make a whole batch of cookie dough, put them in the freezer and bake them in bits as the craving hits you. πŸ˜‰

On Learning and Unlearning...

You think you've done all the (physical) growing that you do when you become an adult and life laughs in your face. 😩 There are a few things in life that are constant and growth is definitely one of them.

I'm one of those people that has always been excited about growth. Growing taller, growing older, growing wiser and definitely growing spiritually. But no one seems to prepare you for emotional growth. The kind of growth that comes with growing pains like you wouldn't believe. Growth that causes you to go through a period of learning and unlearning. Choosing exactly who it is you want to be and realising that you need to grow on your own, but also that you have to grow with the various relationships in your life. And boy is that a tough one, especially if you're keen on growth while the people around you are set on staying in the same place. Or, if you think you've grown enough in a certain place and then you're placed in a situation where you realise that's definitely not the case.🀦🏾‍♀️

Taking stock: Corantine 2020

How crazy is it that the first quarter of 2020 is already done? 🀯 It was just last year that I was counting down to this year and now it's flying past. So while we all have time to read/write I thought I'd do a quick reflection of how I'm doing at the end of it and start this next one on the right foot.πŸ˜… Here we go:

Making: So much progress with my studying.
Come on productivity!πŸ₯³πŸ’ƒπŸΎ

Cooking/Baking: Pancakes and dessert french toast bc dessert and breakfast foods are my absolute favourites! 😍🀀Did you get the chance to snag the recipe yet?

Drinking: Water, the answer is always going to be water. πŸ˜‚

Craving: Outside 😭 and I know everyone knows what I mean when I say that.πŸ˜… I've been making a list of everywhere I want to go eat once they open outside again cause oomf shaded me about being indecisive.🀣

Faith, Self Isolation Pancakes and other stories


All around the world right now Covid-19 is being spoken about. What started a bad flu making it's rounds in China last October and progressed to cases of pneumonia in December quickly showed itself to be the Corona virus that has spread to all corners of the globe. It has scientists working their hardest to find information on it, health workers in battle against the increasing number of cases they have to treat and governments trying their hardest to keep their people safe. But at the heart of it all is people like you and me who are essential in stopping the spread, once and for all.

How do we do this?
Well, we wash our hands, sanitize, avoid unnecessary contact with other people and most important of all, if you can, stay home. After all home is the safest place you can be, surrounded by all the people you love. I know that's where I've been for the last week.πŸ˜…

It may seem like the world has stopped, all our favourite things are cancelled, and the media is just out to instil fear in us but that's so far from the truth. There are so so many things that we can get up to and because we have the love of God in us there's no need to be afraid. His perfect love drives away all fear.😍 (1 John 4:18)

Its the year Two Thousand and Nineteen

Happy New Year!

The other day as it struck midnight and all the fireworks went off signifying the star of the new year, I sat on the couch watching and reflecting.
You know, like a normal ambivert (I'm not going to argue it, I said what I said) would.
Asking myself questions like:
How was it already 2019?
Where had the time flown?
What lessons had I learnt from 2018?
And what did the new year have in store?
So many questions with just enough silence and all the time in the world to think through them.
Fast forward to today, we are a week into the year and I'm finally ready to sit down and put those thoughts into words on your screen. It's been a while since we had one of these heart to hearts and while I post the Taking Stock series every chance I get (I promise those are coming back), there's truly nothing like a good old fashioned deep meaningful conversation (or post in this case).

Out of Christ

Happy Sunday!😁

I know I've been gone for a hot minute 😫 (on YouTube tooπŸ™ˆ), but the hiatus was definitely needed. It helped me gain perspective, learn a few truths and adjust my mindset. It also reminded me why I love to write and share my stories in the first place.

A little while ago during a very interesting interrogation πŸ˜‚ (inside joke) I was asked what my favourite hymn was. Being someone who doesn't like to be put on the spot😩, I asked my questioner to tell me theirs and why that was their particular one.
I've never been so appreciative of someone sharing something like that with me, (maybe one day I'll get them to share) and I don't think I'll ever forget it. So much so that it made me comfortable enough to open up and talk about mine.

Yes, contrary to popular belief I'm not completely extroverted. 😭 I actually have quite introverted tendencies, especially when it comes to talking about myself.

But that's a story for another day.πŸ˜…

Making: So much progress with my studying. I actually posted a video on my YouTube channel about how to study effectively this week.

Cooking/Baking: Banana pancakes and dessert french toast bc breakfast foods are my absolute favourites! Recipe anyone?

Drinking: Water (as per usual) and Loads of coffee bc it's that time again. 

Craving: I was craving donuts this morning but then I stuffed my face with them and I don't think I'll be doing that again in the next few days😷 (maybe in twoπŸ˜…)

While I was away: How to Study Effectively, Picmonic & almost at 20K!

Happy February lovelies!

I know I haven't checked in in a while, but I have a vlog showing all that I was up to in December coming up soon! Thank you for all the love while I was away though!! We're almost at 20K can you believe it?! I think this calls for another GIVEAWAY! I've definitely been brainstorming and I've got a couple of things up my sleeve. So can we get to 20K? Most of my January was taken up by trying to do as much studying as I could. #MedSchoolProblems 
And Picmonic has been an incredible tool that's helped me stay on track and learn so much during that time. I was originally supposed to resume lectures on the 8th, but due to a cholera outbreak in Zambia all schools from primary through to tertiary level had an extended vacation and I'm only officially starting back up on Tuesday (so the med school vlogs and the hectic schedule will be back in full swing). Wish me luck!

There's nothing I can say or do that would help you understand just how much I needed the little impromptu hiatus(es) I've been taking over the year, so I won't even get into that. Meal prep er Fridays?

You know those things, the things that other people do and you think are a little weird until you try them and have your whole life changed? This is one of them. lol.


Ever since I've been on Pinterest meal prepping has been a thing. Like a serious thing. All the food bloggers rave about their overnight oats ( Running with Spoons has some in a smoothie version that I'm dying to try) and YouTube is jam packed with people doing their own versions of it depending on their diet and preference. Check out Domestic Geek to see what I'm on about.

So I've been exposed to it all for a while now, so why am I only talking about it now? Well, a couple of weeks ago in our group chat Mufwaya (Hey girl!) mentioned she was doing it and it automatically sparked my interest in it again. You know, cause I've been crazy busy and coming back from a looong day at school to start cooking from scratch everyday is not my favourite thing to do. That and when am I really going to get the time to cook a whole healthy meal in between coming back from class, going for a run and having to study in the night? πŸ˜•

❤ Life doesn't have to be perfect. Sometimes you're allowed to wrap yourself in a blanket (like a burrito) and watch *insert preferred sad movie* till you shed a tear. 😒

❤ Smiling even when you don't feel like it is a guaranteed way to make you happierπŸ˜„

Feminists : The thing about females


There's this thing about females, that I'm not sure they see.
How they can bless you with a smile,
Or leave you with a frown. 

There's this thing about females, this power that they have.
They can build up whole cities,
Or tear them down.

See the thing about females, that I don't understand.
Is why sometimes they choose to be thorns in your side, 
Instead of jewels in your crown.

Why can't we lay bricks, and build up each other's castles? 
Instead of causing and building up walls of pain.
Why can't we speak to each other's faces in love?
Instead of driving each other insane.
Why can't we help establish each other's empires?
See there's more we have to gain.

We need to do better. Be better. Improve.
We need to be feminists.
And then, then the whole world will move.

The religious leaders are looking for a way to seize Jesus, so they can hardly believe it when Judas offers to betray Jesus and follows through.

Jesus is arrested and the disciples scatter. When Jesus is brought before the Jewish ruling council, the high priest asks him if he is the Messiah. Jesus answers plainly: “I am” (Mark 14:62). Even though it’s the truth, it’s blasphemy to the religious leaders. They declare Jesus as worthy of death.

Early in the morning, the religious council takes Jesus to Pilate, the Roman governor who has authority in capital cases. Because it’s Roman custom to release a Jewish prisoner at Passover, Pilate gives the people the opportunity to release Jesus. But they choose a convicted murderer instead, demanding Jesus’ death.

Dates with Him 😍


It's in the quiet times.
The times when everything around me is still.
The times when the silence is so loud, when life has had it's fill.

That's when He reaches out and touches me.
To let me know that He's still there.
That He's always watching and He'll always care.

That we can just sit and have a conversation.
About everything and nothing.
That we can chat for hours on end and He can tell me something.

Something I may not have heard in the loudness, or in the rush.
Something I may have been asking/searching/waiting for, He just wanted me to hush.

See He's not the type to shout out loud, or to push and shove.
He's such a gentleman and does everything with love.

So in those quiet times, when I can finally listen clear.
I have dates with God, and he tells me all I need to hear.

How to study: Snack - Caramel Corn Edition

Happy FriYay!

So today's going to be a (semi) foodie post cause you know, there's always time to eat. 

Seriously.

Also I'm a firm believer in snacking to keep me awake during studying. Why? Cause your girl needs a supply of energy and no one falls asleep chewing. Lool. I usually have a bunch of snacks around for this purpose, either fruit, nuts, yogurt or some junk food and tons of water to keep me hydrated. That said, sometimes I actually need to take a break and make a quick snack to wake me up and reset my mind while trying to get some work done.


Last week while I was trying to get some work done for a Physiology end of block test I whipped up this batch of Caramel Corn. It's such a simple treat and it satisfied my candy craving. Although my "Foodies" group did remind me that it looked like a bowl of cavities and diabetesπŸ™Š. Meh, I don't do this often.πŸ˜‚ 

Please note the lack of specific measurements, I just eyeballed it according to how hungry I was feeling and how much popcorn I madeπŸ˜…

How to : Apple Crumble

On Christmas Eve my sisters decided to go for a photo shoot.


I say my sisters because no one told me beforehand that this was happening.πŸ˜’ And if any one knows me, I do not work well with last minute plans. Not at all. I probably won't (be able to) show up. And that day was no exception. Not because I was being difficult or didn't want to go, I really do make the effort for close friends and family, but because my older sister always has a theme for everything and I had nothing clean to wear in her scheme. That said, their pictures turned out pretty amazing, as you can see for yourself. So there is no salt to be found here. *sits pretty*πŸ˜‡
