"C is for Cookie, that's good enough for me!" ~ The Cookie Monster
With no shame whatsoever, I give you this post:
I didn't set out with the intentions of making it a blog post but oh well, that's the way the cookie crumbles (see what I did there?). So basically I'd been itching to bake all weekend but never got the chance: no time, no flour etc. This morning however, I woke up with a GIANT craving for cookies, something had to be done! I remembered one of my favourite blogs (
Whispering Wind) had a recipe for some so I looked it up and got started. I changed a few bits to cater to my tastes and it all (prep and baking) took about 30 mins #winning.

What I used:
- 2.5 cups
wheat bran flour
0.5 cup all purpose flour
0.5 1 teaspoon baking soda powder
1 tablespoon cinnamon (optional) a pinch of salt
1 3/4 cup butter/ margarine
- 1 cup (Rich Dark) brown sugar
- 1
egg 1/2 cup milk
- 1 teaspoon vanilla essence
- 1 cup chocolate chips
(I used ordinary dark chocolate in small pieces) - optional
What I did:
- Preheat oven to 180 degrees celcius
- Spray a baking pan/ tray or line with baking sheets
- Mix
wheat-bran, all purpose flour, cinnamon and baking soda powder in a small bowl
- Beat butter till creamy in a separate larger bowl. Beat in sugar,
eggs milk and vanilla essence
- Mix in the flour mixture and add in chocolate chips (If you so desire)
- Roll dough into about 0.5cm-1cm thick disk on a clean flat surface (Put flour on the surface and rolling pin to avoid sticking)
- Cut cookies with a cookie cutter or knife and place on baking tray with adequate spacing.
- Eat remaining cookie dough (it's delicious!)
- Bake in oven for 15-20 minutes
or until the edges start to brown until outside is crunchy and center is soft and clean when poked with a fork.
- Remove and leave to cool (or serve warm)
